First I sauté spinach; then add a package of firm tofu. I add chili powder, cumin, salt. Then I add leftover brown rice and pinto beans. Then I add enchilada sauce. Finally, I add green salsa and have with tortilla chips. Very easy.

What do you think of my son's X-Country coach who keeps telling them to "eat lots of red meat" as it supposedly supplies the iron they need for healing? What's wrong with spinach and other non-meat sources of iron?

My wife has anemia and she eats burgers. But I've read that spinach and bok choi can do the trick. I read The Face on Your Plate recently and I just can't deal with the abattoirs, too gruesome for me.
I'm at peace without the red meat and such, but my wife loves it. I don't preach to her or anyone.

I should also point out these veggie meals are not so much about preaching a veggie diet as they are an easy accessible reference guide for myself. I easily forget all these ad hoc concoctions.

Yes, after reading The Face on Your Plate by Jeff Masson and other similar exposes on the meat industry. Nothing from the abattoir for me.
